Hi! I’m Tara, the voice behind Simple Vegetarian Dishes. Here I explore my answers to the eternal question, “What can we eat tonight?” I aim to add more fresh produce in a variety of colors to my diet, without spending all day in the kitchen.
While I’ve always enjoyed delicious food, it took me a while to get excited about cooking. This is primarily because I was resistant to the stereotype of a woman’s place being in the kitchen.
However, I’ve realized that the fastest, most delicious, and most economical way to eat healthy food and get more plants into my diet is to put them there myself. This way I can free up my time to focus on what’s most important.
I used to just cook as a form of stress relief on my day off, or just to meal prep.
However, as the years went by and I got better at cooking, more of the small delights of cooking revealed themselves to me: the improvisation in the creative process, the grounding effect and mindfulness engendered by chopping vegetables, and the pride in a meal that is both nourishing and tastier than much of what I could find in a restaurant.
Now, it’s safe to say I’m hooked! I hope you enjoy reading along as I document some of the fun recipes I’ve been making in my kitchen.
